Instructions

  1. Warm olive oil in a large skillet over medium heat. Sauté ½ cup diced yellow onion until translucent, about 3 minutes.
  2. Add 2 minced garlic cloves and 8 ounces sliced white button mushrooms to the skillet. Cook for 6 minutes until mushrooms release their moisture and turn golden brown.
  3. Grab a mixing bowl and whisk together 1 ¾ cups chicken broth, ½ cup heavy cream, ½ cup sour cream, ½ cup grated Parmesan, ½ teaspoon salt, ¼ teaspoon black pepper, and ½ teaspoon dried thyme until smooth.
  4. Preheat your oven to 375°F. Coat a 9×13-inch casserole dish with cooking spray or butter.
  5. Spread 1 cup uncooked long-grain white rice across the bottom of the prepared dish. Layer 2 cups shredded chicken evenly over the rice.
