- Add 2 minced garlic cloves and 8 ounces sliced white button mushrooms to the skillet. Cook for 6 minutes until mushrooms release their moisture and turn golden brown.
- Grab a mixing bowl and whisk together 1 ¾ cups chicken broth, ½ cup heavy cream, ½ cup sour cream, ½ cup grated Parmesan, ½ teaspoon salt, ¼ teaspoon black pepper, and ½ teaspoon dried thyme until smooth.
- Preheat your oven to 375°F. Coat a 9×13-inch casserole dish with cooking spray or butter.
- Spread 1 cup uncooked long-grain white rice across the bottom of the prepared dish. Layer 2 cups shredded chicken evenly over the rice.
- Pour the sautéed mushroom mixture over the chicken, then drizzle the cream sauce across the entire surface. Gently stir to distribute ingredients evenly.
- Cover the dish tightly with aluminum foil. Bake for 45 minutes at 375°F until rice becomes tender and absorbs liquid.
