Description

Crafting John Wayne Casserole brings pure comfort to your dinner table with layers of ground beef, biscuits, and zesty toppings. Cheesy, hearty, and packed with Southwestern flair, this dish delivers a satisfying meal that’ll have your family asking for seconds.

Ingredients

Scale

Main Ingredients:

  • 32 oz tater tots
  • 1 lb ground beef
  • 16 oz sour cream
  • 8 oz sharp cheddar cheese

Supporting Ingredients:

  • 1 small yellow onion
  • 1 green bell pepper
  • 1 oz taco seasoning mix
  • ⅛ teaspoon salt
  • ¼ teaspoon pepper
  • ½ teaspoon onion powder

Garnish/Topping Ingredients:

  • 1 diced tomatoes
  • 1 bell peppers
  • water (as needed)

Instructions

  1. Preheat the oven to 375°F and grab a 9×13 inch baking dish. Grab your ground beef and break it into a large skillet over medium-high heat.
  2. Chop one small yellow onion and one green bell pepper. Add them to the skillet with the beef and cook for 7-8 minutes until the meat browns completely.
  3. Sprinkle 1 oz. of taco seasoning mix into the skillet. Pour ¼ cup water and stir, letting the mixture simmer for 3-4 minutes until the liquid reduces and thickens.
  4. Remove the 32 oz. bag of frozen tater tots from the package. Arrange them in a single layer across the bottom of the baking dish, creating a crispy base.
  5. Spread the entire beef and vegetable mixture evenly over the tater tots, ensuring complete coverage.
  6. In a separate mixing bowl, combine 16 oz. sour cream, 4 oz. shredded sharp cheddar cheese, ⅛ tsp. salt, ¼ tsp. pepper, and ½ tsp. onion powder. Stir until smooth.
  7. Pour the sour cream mixture over the beef layer, using a spatula to distribute it evenly.
  8. Sprinkle the remaining 4 oz. of sharp cheddar cheese across the top of the casserole.
  9. Slide the casserole into the preheated oven and bake for 25-30 minutes, until the cheese melts and the edges turn golden brown.
  10. Remove from the oven and let the casserole rest for 5 minutes before serving. Top with diced tomatoes and extra bell peppers if desired.

Notes

  • Swap ground beef for ground turkey or plant-based crumbles to make the casserole lighter and more diet-friendly.
  • For extra crispiness, partially bake the tater tots before adding the beef layer to ensure they stay crunchy.
  • Prepare the casserole ahead of time and refrigerate, then bake when ready to serve – this helps meld the flavors together.
  • Add chopped jalapeños or green chiles to the beef mixture for a spicier version that kicks up the Southwest flavor profile.
