Instructions
- Warm your olive oil in a large skillet over medium heat at 350°F. Sauté 1 chopped medium onion and 2 minced garlic cloves until they become translucent and fragrant, about 3-4 minutes.
- Add 10 oz sliced mushrooms to the skillet. Season with ½ teaspoon salt and ¼ teaspoon black pepper. Cook for another 5-6 minutes until mushrooms release their moisture and begin to brown.
- Trim and cut 1 lb green beans into 2-inch pieces. Add them to the skillet and stir to combine with the mushroom mixture.
- Pour 1 can of mushroom soup into the skillet. Mix thoroughly to coat all vegetables evenly with the creamy sauce.
- Transfer the vegetable mixture to a 9×13 inch casserole dish. Spread it out in an even layer to ensure consistent cooking.
- Sprinkle 1 cup of shredded cheddar cheese across the top of the casserole. Follow with 1 cup of crispy fried onions for added crunch.
- Place the casserole in a preheated oven at 350°F. Bake for 25-30 minutes until the cheese melts completely and the edges turn golden brown.
