Instructions

  1. Steam 4 cups broccoli in a steaming basket for 5 minutes until fork-tender. Chop into bite-sized pieces.
  2. Mix chopped broccoli with 1 can cream of chicken soup, 1 cup mayonnaise, ¼ cup melted butter, 2 beaten eggs, ½ chopped onion, ½ teaspoon salt, and ¼ teaspoon pepper.
  3. Fold ¾ cup extra sharp cheddar cheese into the broccoli mixture until evenly distributed.
  4. Coat an 8×8-inch casserole dish with cooking spray.
  5. Transfer the entire broccoli mixture into the prepared baking dish.
  6. Sprinkle remaining ¾ cup cheese and ½ sleeve of crushed Ritz crackers across the top of the casserole.
  7. Bake at 350°F for 30 minutes, watching for golden-brown topping and fully melted cheese.
