Ingredients

Scale

Main Protein:

  • 23 cups chicken

Supporting Ingredients:

  • 2 cups rice
  • 1 package onion soup mix
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup

Liquid and Seasoning Ingredients:

  • 2 cups milk
  • ¾ cup sour cream
  • ½ cup water
  • Salt and pepper to taste

Instructions

  1. Warm your oven to precisely 350°F and grab a medium mixing bowl for combining ingredients.
  2. Dump 2-3 cups of shredded rotisserie chicken into the bowl with 1 package of Lipton Onion Soup Mix.
  3. Pour in 1 can cream of mushroom soup, 1 can cream of chicken soup, and 2 cups milk, stirring thoroughly to blend everything smoothly.
  4. Mix ¾ cup sour cream and ½ cup water into the mixture, then add 2 cups uncooked Minute Rice.
  5. Season your mixture with a pinch of salt and pepper, ensuring all ingredients are well incorporated.
  6. Coat a 9×13 baking pan completely with cooking spray to prevent sticking.
  7. Transfer your entire chicken and rice mixture into the prepared pan, spreading it evenly.
  8. Cover the pan tightly with aluminum foil and slide into the preheated 350°F oven.
  9. Bake covered for exactly 45 minutes without opening the oven door.
  10. Remove foil after 45 minutes and return pan to the oven for another 15 minutes.
  11. Check that rice is tender and top has turned golden brown with bubbling edges.
  12. Pull casserole from oven and let it rest 5 minutes before serving hot and fresh.

Notes

  • Use rotisserie chicken for extra flavor and convenience in this quick casserole.
  • Swap white rice with brown rice for added nutrition, but increase baking time by 15-20 minutes.
  • For a gluten-free version, select gluten-free cream soups and check onion soup mix ingredients.
  • Add frozen mixed vegetables like peas and carrots to boost the dish’s nutritional value and color.
