Instructions

  1. Chop 2 cups of cooked chicken into bite-sized pieces. Cut 2 small heads of broccoli into 2-inch segments.
  2. Boil broccoli for 3-4 minutes until tender. Drain completely in a colander and set aside.
  3. Prepare 2 cups of rice following package instructions until fluffy and fully cooked.
  4. Melt ¼ cup butter in a medium saucepan over medium heat. Whisk in ¼ cup flour until smooth.
  5. Pour in 14-ounce can of chicken broth and 1 bouillon cube. Stir continuously until sauce thickens, about 2-3 minutes.
  6. Add ½ cup cream, ¼ teaspoon black pepper, ¼ cup Parmesan cheese, and 1 cup cheddar cheese. Stir until cheese melts completely.
  7. Preheat your oven to 350°F. Grease a 9×13-inch baking dish.
  8. Layer cooked rice as the bottom layer. Spread broccoli pieces evenly over rice.
  9. Distribute chicken pieces across the broccoli layer. Pour cheese sauce over entire casserole.
  10. Sprinkle remaining 1 cup of cheddar cheese across the top of the casserole.
  11. Bake at 350°F for 25-30 minutes until cheese melts and casserole is heated through.
