Instructions
- Chop 2 cups of cooked chicken into bite-sized pieces. Cut 2 small heads of broccoli into 2-inch segments.
- Boil broccoli for 3-4 minutes until tender. Drain completely in a colander and set aside.
- Prepare 2 cups of rice following package instructions until fluffy and fully cooked.
- Melt ¼ cup butter in a medium saucepan over medium heat. Whisk in ¼ cup flour until smooth.
- Pour in 14-ounce can of chicken broth and 1 bouillon cube. Stir continuously until sauce thickens, about 2-3 minutes.
- Add ½ cup cream, ¼ teaspoon black pepper, ¼ cup Parmesan cheese, and 1 cup cheddar cheese. Stir until cheese melts completely.
- Preheat your oven to 350°F. Grease a 9×13-inch baking dish.
- Layer cooked rice as the bottom layer. Spread broccoli pieces evenly over rice.
- Distribute chicken pieces across the broccoli layer. Pour cheese sauce over entire casserole.
- Sprinkle remaining 1 cup of cheddar cheese across the top of the casserole.
- Bake at 350°F for 25-30 minutes until cheese melts and casserole is heated through.
