Instructions

  1. Bring a large pot of water to a rolling boil. Add 1 tablespoon (15 ml) salt and 8 ounces (225 g) pasta. Cook for 7-8 minutes until al dente, then drain and coat lightly with 1 teaspoon olive oil to prevent sticking.
  2. Melt 2 tablespoons (30 g) butter with 2 tablespoons (30 ml) olive oil in a large skillet over medium-high heat. Add 4 minced garlic cloves and ½ teaspoon red pepper flakes, sautéing for 30 seconds until fragrant.
  3. Add 1 pound (450 g) peeled shrimp to the skillet. Cook 2 minutes per side until they turn pink and opaque. Splash in 2 tablespoons (30 ml) fresh lemon juice and ¼ cup (60 ml) chicken broth, then transfer shrimp to a separate plate.
  4. Pour ½ cup (120 ml) heavy cream into the same skillet. Whisk in ½ cup (50 g) grated parmesan cheese until the sauce becomes smooth and slightly thickened, about 2-3 minutes.
  5. Combine the cooked pasta, shrimp, and cream sauce in a 9×13 inch (23×33 cm) greased baking dish. Sprinkle 1 cup (100 g) mozzarella and ¼ cup (25 g) additional parmesan across the top.
  6. Slide the baking dish into a preheated 375°F (190°C) oven. Bake for 15-18 minutes until the cheese melts and edges turn golden brown.
  7. Switch oven to broil. Position the dish 4-5 inches from the heat source and broil for 1-2 minutes to create a crispy, bubbling cheese topping.
