Instructions
- Preheat the oven to 400°F. Cover a baking sheet with parchment paper and lightly coat with 1 tablespoon olive oil.
- Combine 680 g beef mince, 1 finely grated onion, 2 minced garlic cloves, 60 g breadcrumbs, 1 egg, 2 tablespoons milk, 1 tablespoon Worcestershire sauce, 1 teaspoon mustard, 1 teaspoon Italian herb blend, ½ teaspoon smoked paprika, 1 teaspoon salt, and ½ teaspoon black pepper in a large mixing bowl.
- Gently mix the ingredients with your hands until just combined. Avoid overmixing the meat mixture.
- Divide the mixture into 10-12 equal portions. Flatten each portion in your palm.
- Place 1 cheese cube (about 15 g) in the center of each meat portion. Carefully wrap the meat completely around the cheese, sealing it inside.
- Shape each stuffed portion into a patty approximately 1.5 cm thick. Ensure the cheese is fully enclosed.
- Arrange the patties on the prepared baking sheet, leaving space between each one. Brush the tops with remaining 1 tablespoon olive oil.
- Bake for 12-14 minutes at 400°F, until the meat is nearly cooked through.
- Remove from the oven and sprinkle 120 g grated cheese evenly over the top of each patty.
- Return to the oven for an additional 5-8 minutes, until the cheese melts and the internal temperature reaches 160°F.
- Let the patties rest for 3 minutes after removing from the oven.
- Optional: Garnish with a handful of chopped fresh parsley or chives before serving hot.

- Cheese selection matters most, so choose a melty variety like cheddar or mozzarella that creates gooey pockets inside each patty.
- Handle the meat mixture gently to keep the texture tender and prevent tough, dense patties.
