Ingredients
Scale
Meats:
- 1 lb breakfast sausage
- 8 slices bacon, chopped
Vegetables:
- 1 small onion, diced
- 1 bell pepper, diced
- 1 package (16 oz) frozen hash browns, thawed
Dairy and Seasonings:
- 6 large eggs
- 1 cup milk
- 2 cups shredded cheddar cheese
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 2 tablespoons chopped fresh parsley
Instructions
- Heat the oven to 375°F. Grab a 9×13 inch baking dish and coat it thoroughly with cooking spray.
- Grab a large skillet and crisp 8 slices of chopped bacon over medium heat. Transfer the cooked bacon to a paper towel-lined plate to drain excess grease.
- Using the same skillet with bacon drippings, brown 1 pound of breakfast sausage. Add 1 diced small onion and 1 diced bell pepper. Cook until the meat is completely cooked and vegetables are softened.
- Crack 6 large eggs into a spacious mixing bowl. Pour in 1 cup of milk and whisk vigorously. Sprinkle 1 teaspoon garlic powder, 1 teaspoon salt, and ½ teaspoon black pepper into the mixture.
- Dump the thawed 16-ounce package of hash browns into the egg mixture. Fold in the cooked bacon, sausage-vegetable blend, and 1 cup of shredded cheddar cheese.
- Transfer the entire mixture into the prepared baking dish. Scatter the remaining 1 cup of cheddar cheese across the top of the casserole.
- Slide the dish into the preheated 375°F oven. Bake for 35-40 minutes until the center sets and the cheese transforms into a golden, bubbling layer.
- Remove from the oven and allow the casserole to rest for 5 minutes. Sprinkle 2 tablespoons of chopped fresh parsley on top if desired before serving.
Notes
- Swap regular bacon for turkey bacon to reduce fat and create a lighter version of the casserole.
- Prepare the entire casserole the night before and refrigerate, then bake in the morning for an easy breakfast solution.
- For a low-carb option, replace hash browns with cauliflower rice or additional vegetables like zucchini or spinach.
- Allow the casserole to rest for 5-10 minutes after baking to help it set and make cutting and serving easier.
