Instructions

  1. Warm your oven to exactly 375°F and lightly coat a 9×13 inch baking dish with cooking spray.
  2. Pour 2 tbsp olive oil and 1 tbsp butter into a large skillet. Sauté 3 thinly sliced yellow onions over medium heat for 18-20 minutes until deep golden and caramelized.
  3. Stir 2 tsp fresh thyme leaves, 1 tbsp balsamic vinegar, ½ tsp salt, and ¼ tsp black pepper into your caramelized onions. Remove from heat.
  4. Season 4 chicken breasts with additional salt and pepper. Quickly sear them in the same skillet for 2-3 minutes on each side until light golden.
  5. Nestle seared chicken breasts into your prepared baking dish. Spread caramelized onions evenly across the top of each breast.
  6. Pour ½ cup beef broth around the chicken pieces, ensuring liquid surrounds but doesn’t completely cover the meat.
  7. Sprinkle 1 cup shredded Gruyere cheese and ¼ cup Parmesan cheese generously over each chicken breast.
  8. Cover the baking dish tightly with aluminum foil. Bake at 375°F for exactly 20 minutes.
  9. Remove foil and continue baking for 12-15 minutes until cheese turns golden and chicken reaches 165°F internal temperature.
  10. Allow the dish to rest for 5 minutes. Optionally garnish with chopped fresh parsley before serving.
