Description

Baked pineapple delivers a sweet tropical treat that melts in your mouth with caramelized golden goodness. Warm spices and buttery notes make this simple dessert a crowd-pleasing finale for any meal.

Ingredients

Scale

Fruit:

  • 1 20 ounces crushed pineapple not drained
  • 1 20 ounces pineapple chunks drained

Sweeteners and Thickeners:

  • ½ cup brown sugar
  • 2 tablespoons cornstarch
  • ½ teaspoon cinnamon

Binding and Enriching Ingredients:

  • 2 eggs beaten
  • 1 tablespoon butter
  • 1 teaspoon vanilla extract

Instructions

  1. Drain the 20 oz. pineapple chunks, carefully reserving ¼ cup of liquid in a separate small bowl.
  2. Whisk 2 Tbsp cornstarch into the reserved pineapple juice until no lumps remain, creating a smooth slurry.
  3. Grab a large mixing bowl and combine the 20 oz. crushed pineapple, 20 oz. drained pineapple chunks, ½ cup brown sugar, 2 beaten eggs, and 1 tsp vanilla extract. Stir until ingredients are evenly distributed.
  4. Pour the cornstarch slurry into the pineapple mixture, stirring thoroughly to incorporate all ingredients completely.
  5. Transfer the entire mixture into a baking dish, spreading it smoothly and evenly across the surface.
  6. Slice 1 Tbsp butter into small dots and scatter them across the top of the pineapple mixture.
  7. Sprinkle ½ tsp ground cinnamon evenly over the surface of the dish.
  8. Place the baking dish in a preheated oven at 350°F and bake for exactly 60 minutes until the top is lightly golden and the mixture is bubbling.
  9. Remove from the oven and let the baked pineapple rest for 10 minutes before serving warm.

Notes

  • Drain pineapple carefully to capture the exact amount of juice needed for the cornstarch mixture.
  • Whisk the cornstarch into the reserved juice smoothly to prevent lumps and ensure a silky texture.
  • For a gluten-free version, confirm your cornstarch is certified gluten-free and use alternative sweeteners like maple syrup.
  • Let the baked pineapple rest for 10 minutes after removing from the oven to help the filling set and intensify the flavors.
