Description

Whip up this easy brunch casserole when weekend guests need a delicious morning meal that practically makes itself. Crispy edges, cheesy layers, and zero morning stress mean your breakfast table becomes an instant crowd-pleaser.

Ingredients

Scale

Main Protein:

  • 8 large eggs
  • 12 oz Canadian bacon
  • 1 cup shredded Swiss or cheddar cheese

Base/Carbohydrate:

  • 6 English muffins

Seasonings and Sauce:

  • 1 tsp onion powder
  • ½ tsp garlic powder
  • 2 cups milk
  • 1 packet hollandaise sauce mix
  • Salt and pepper to taste

Instructions

  1. Grease a 9×13-inch baking dish with cooking spray. Your dish will prevent sticking and make cleanup easier.
  2. Chop 6 English muffins into bite-sized cubes. Distribute them evenly across the bottom of the baking dish.
  3. Dice 12 oz of Canadian bacon into small pieces. Scatter the pieces uniformly over the English muffin layer.
  4. Crack 8 large eggs into a mixing bowl. Whisk them thoroughly with 2 cups of milk, 1 tsp onion powder, and ½ tsp garlic powder.
  5. Season the egg mixture with salt and pepper to your taste. Pour the liquid carefully and evenly over the muffin and bacon layers.
  6. Sprinkle 1 cup of shredded Swiss or cheddar cheese across the entire surface of the casserole.
  7. Cover the dish with aluminum foil. Refrigerate overnight or for at least 2 hours to allow flavors to meld.
  8. Remove the casserole from the refrigerator 30 minutes before baking. Preheat your oven to 375°F.
  9. Bake the covered casserole for 30 minutes at 375°F. Remove the foil and continue baking for another 15-20 minutes until the center is set.
  10. While the casserole bakes, prepare the hollandaise sauce according to the packet instructions using the recommended butter and milk.
  11. After baking, let the casserole rest for 10 minutes. This helps the dish set and makes serving easier.
  12. Slice the casserole into portions. Drizzle warm hollandaise sauce over each serving just before presenting.

Notes

  • Prep ahead by assembling the casserole the night before, which allows flavors to meld and saves morning cooking time.
  • Customize the cheese blend with your favorite varieties like sharp cheddar, gruyere, or pepper jack for different flavor profiles.
  • For gluten-free options, swap English muffins with gluten-free bread or hash browns as the base layer.
  • Make this vegetarian by replacing Canadian bacon with sautéed mushrooms, spinach, or roasted bell peppers for added texture and nutrition.
