Instructions

  1. Heat the oven to 400°F and place a whole feta block in the center of a ceramic baking dish, surrounding it with 2 cups of halved cherry tomatoes.
  2. Drizzle ¼ cup olive oil over the cheese and tomatoes, then scatter 4 minced garlic cloves, 1 teaspoon each of oregano and basil, and ½ teaspoon red pepper flakes across the dish.
  3. Season the entire surface with salt and pepper, ensuring even distribution.
  4. Slide the baking dish into the 400°F oven and roast for exactly 20 minutes until tomatoes blister and feta softens.
  5. Meanwhile, toss 1 pound of peeled shrimp with a splash of olive oil, salt, and pepper in a separate bowl.
  6. Pull the dish from the oven and gently stir the tomato and garlic mixture around the feta.
  7. Arrange the seasoned shrimp directly on top of the roasted feta and tomatoes.
  8. Return the dish to the 400°F oven and bake another 10-12 minutes until shrimp turn completely pink.
  9. Remove from oven and immediately drizzle 1 tablespoon each of lemon juice and honey over the dish.
  10. Finish by sprinkling 1 tablespoon each of chopped parsley and lemon zest across the top.
  11. Serve hot with sliced baguette for soaking up the aromatic sauce.
