Ingredients

Scale

Main Ingredients:

  • 1 round Brie
  • 1 sheet Puff Pastry
  • 2 cups Red Apple
  • 0.25 cup Chopped Walnuts

Supporting Ingredients:

  • 2 tablespoons Unsalted Butter
  • 1 tablespoon Chopped Fresh Thyme
  • 1 tablespoon Honey
  • 2 tablespoons Brown Sugar
  • 1 tablespoon Lemon Juice

Seasonings and Finishing Touches:

  • 1 egg Egg Wash
  • 0.5 teaspoon Cinnamon
  • 0.25 teaspoon Nutmeg
  • 0.25 teaspoon Kosher Salt
  • to taste Flaky Salt

Instructions

  1. Warm your oven to precisely 400°F, creating the ideal baking environment for your pastry.
  2. Melt 2 tablespoons of butter in a medium saucepan over medium heat, then add your 2 cups of diced red apples and 1 tablespoon of fresh thyme.
  3. Incorporate 1 tablespoon of honey, 2 tablespoons of brown sugar, 1 tablespoon of lemon juice, 0.5 teaspoon of cinnamon, 0.25 teaspoon of nutmeg, and 0.25 teaspoon of kosher salt into your simmering apple mixture.
  4. Reduce heat and let your apple mixture cook for 10 minutes, stirring occasionally until the apples soften and caramelize. Remove from heat and allow to cool slightly.
  5. Spread your puff pastry sheet on a lightly floured surface, creating a smooth canvas for your brie.
  6. Spoon the warm apple mixture directly onto the center of your pastry sheet.
  7. Place the entire round of brie carefully on top of the apple mixture.
  8. Gently fold the pastry edges over the brie, completely encasing the cheese. Seal the edges by pinching them together.
  9. Brush the entire pastry surface with egg wash for a golden, glossy finish.
  10. Position the wrapped brie seam-side down on a baking sheet.
  11. Slide into the preheated 400°F oven and bake for 30 minutes until the pastry turns a beautiful golden brown.
  12. While baking, toast 0.25 cup of walnuts in a dry skillet over medium-low heat for 3-5 minutes.
  13. After removing from the oven, let the brie rest for 3-5 minutes to allow the cheese to settle.
  14. Transfer to a serving platter, drizzle with an extra touch of honey, sprinkle toasted walnuts on top, and garnish with fresh thyme and a pinch of flaky salt.

Notes

  • Check pastry temperature to ensure it’s chilled but pliable for easier wrapping around the brie.
  • Toast walnuts carefully to enhance their flavor without burning, watching them closely during the short cooking time.
  • When caramelizing apples, use a wide pan to help them brown evenly and develop rich, deep flavors.
  • For a gluten-free version, substitute puff pastry with almond flour-based dough or serve baked brie without pastry.
