Instructions

  1. Slice 2 chicken breasts horizontally and season with 1 tsp dried Italian herbs, salt, and pepper.
  2. Cook 6-8 bacon slices in a medium pan until crispy. Remove bacon and save the fat.
  3. Pour half the bacon fat back into the pan. Heat over medium-low temperature.
  4. Sauté 1 crushed garlic clove for 1 minute until fragrant.
  5. Add seasoned chicken and cook 5-8 minutes per side at medium heat until fully cooked.
  6. Let chicken rest 10 minutes on a plate, then cut into bite-sized pieces.
  7. Chop bacon slices into desired size.
  8. Preheat oven to 340°F.
  9. Grease a casserole dish with reserved bacon fat.
  10. Mix 3 tbsp ranch seasoning, 1¼ cup cream of chicken soup, ½ cup chicken broth, 1 cup sharp cheddar, Velveeta cheese, and boiled pasta in a large bowl.
  11. Transfer pasta mixture to the casserole dish.
  12. Sprinkle chopped chicken, bacon, ½ cup Monterey Jack, and remaining ½ cup sharp cheddar on top.
  13. Bake 20-25 minutes until cheese melts and turns crusty.
  14. Garnish with chopped parsley or chives before serving.
