Instructions

  1. Cook 6 bacon slices in a large skillet at medium heat for 5-7 minutes until crispy. Transfer to a paper towel, reserving 1 tablespoon bacon fat.
  2. Add 1 pound ground beef and 1 diced medium onion to the skillet with reserved bacon fat. Sauté at medium-high heat for 7 minutes until beef browns and onion softens.
  3. Mix 2 minced garlic cloves, 2 tablespoons ketchup, 1 tablespoon mustard, 2 tablespoons Worcestershire sauce, ½ teaspoon paprika, ½ teaspoon salt, and ½ teaspoon pepper into the beef mixture. Cook 2 minutes until fragrant.
  4. Boil water and cook 1 packet ramen noodles for 2 minutes, keeping them slightly firm. Drain and set aside.
  5. Whisk 1 can condensed cheddar cheese soup, ½ cup sour cream, and ½ cup whole milk in a large bowl.
  6. Stir 1 cup cheddar and ½ cup mozzarella cheeses into the soup mixture until combined.
  7. Fold cooked ramen noodles, beef mixture, and half the bacon into the cheese mixture. Mix thoroughly.
  8. Preheat oven to 350F and grease a 9×13-inch baking dish.
  9. Spread noodle mixture evenly in the dish. Top with remaining 1 cup cheddar cheese.
  10. Sprinkle ½ cup crushed tortilla chips and remaining bacon crumbles over the top.
