Description

Asparagus bacon chicken potato casserole brings comfort straight to your dinner table with savory layers of hearty ingredients. Creamy, cheesy, and packed with flavor, this casserole delivers a satisfying meal that’ll have your family asking for seconds.

Ingredients

Scale

Main Ingredients:

  • 1 pound boneless, skinless chicken breasts
  • 1 pound fresh asparagus
  • 4 cups diced potatoes
  • ½ pound bacon

Supporting Ingredients:

  • 1 medium onion
  • 2 cloves garlic

Finishing Ingredients:

  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup shredded cheddar cheese
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Heat your oven to 375°F and coat a 9×13-inch baking dish with cooking spray for easy cleanup.
  2. Crisp ½ pound bacon in a large skillet over medium-high heat for 6-8 minutes. Transfer bacon to a paper towel, keeping 2 tablespoons of rendered fat in the pan.
  3. Sauté 1 diced medium onion in the bacon fat for 5 minutes until translucent. Add 2 minced garlic cloves and cook for another 30 seconds.
  4. Season 1 pound chicken breasts with salt and pepper. Sear in the skillet for 3 minutes per side until golden and developing a nice crust.
  5. Pour 1 cup heavy cream and 1 cup chicken broth into the skillet. Whisk in 1 teaspoon dried thyme and 1 teaspoon paprika, allowing the sauce to simmer and thicken for 2 minutes.
  6. Spread 2 cups diced potatoes across the bottom of your baking dish. Season with salt and pepper.
  7. Layer 1 pound chopped asparagus over the potatoes. Sprinkle half the crispy bacon pieces on top.
  8. Arrange seared chicken breasts over the asparagus layer. Pour the creamy sauce evenly across the casserole.
  9. Top with remaining 2 cups potatoes and bacon pieces. Scatter 1 cup shredded cheddar cheese over the entire surface.
  10. Cover with foil and bake at 375°F for 25 minutes. Remove foil and continue baking for 15-20 minutes until cheese turns golden and potatoes become tender.
  11. Rest the casserole for 5 minutes before serving to allow flavors to settle and sauce to slightly thicken.

Notes

  • Always pat the chicken dry before searing to ensure a golden-brown crust that locks in moisture.
  • Reserve some bacon grease for extra flavor, but drain excess to keep the dish from becoming too greasy.
  • For a lighter version, swap heavy cream with half-and-half and use turkey bacon instead of regular bacon.
  • Slice asparagus and potatoes uniformly to guarantee even cooking and consistent texture throughout the casserole.
