First course

Jalapeños rellenos de minilla-pickled jalapeños stuffed with tuna

Garnacha de res– corn tortilla, braised beef, chile morita

Camaraon– coconut batter shrimp, pineapple marmalade, pickled red onion

 

Second course

VERACRUZ

Ceviche

Lime marinated fish, red onion, tomato, pickled jalapeños,

olives, parsley, tomato-citrus broth, crispy capers

 

Third course

TAMAULIPAS

Jaibas

Lighlty fried blue crab meat stuffed shells, tomato sofrito, garlic

parsley, serrano chiles bread crumbs

 

Fourth course

YUCATAN/CAMPECHE

Pollo pibil

Achiote marinated braised chicken, banana leaf, pickled red onins & habaneros,

sour orange salsita, mustard seeds, burnt tortillas

Vanilla bean flan, piloncillo caramel, vanilla bean toasted nuts

Begin the celebration with a selection of Botanas Mexicanas that includes Tostaditas de Tinga de Res, Guacamole con Chicharron, Tacos Dorados, Sopes de Chorizo and Tacos de Chicharron en Salsa.

Second Course
Tamales de mole poblano
Steamed corn masa, stuffed with pulled chicken, wrapped in a banana leaf, mole poblano, sesame seeds, queso fresco, micro cilantro

Third Course
Chile relleno de quesillo
Roasted poblano chile stuffed with cheese from Oaxca, egg battered, pan fried, chile habanero-tomato broth, epazote crema, micro greens

Fourth Course
Pozole rojo
Lobster & shrimp broth, hominy, chile guajillo, shrimp, little neck clams,
mussels, squid, lobster tail sides oregano, avocados, radishes, lime, serrano chiles, onion, cilantro, tostadas

Fifth Course
Flan Napolitano
Vanilla bean Mexican custard, piloncillo caramel, crushed nuts, mezcal whipped cream, toasted orange zest, galletas marias
