First, guests will warm up their appetites with a Trio of Guacamoles that includes Tradicional, avocado, pico de gallo, Serrano chiles, lime, cilantro and crispy tortillas; Ramps, avocado, tomatillo pico de gallo, pickled ramps, grilled corn and epazote and Al Pastor, avocado, pico de gallo, double cut bacon, grilled pineapple, ancho-guajillo chiles, cured onions and cilantro chicharrón.
Guests will then delight in a Trio de Ceviches that includes Dorado, lemon marinated mahi, pico de gallo, avocado, orange, chile de arbol broth and crispy avocado; Camaron, poached shrimp, pico de gallo, mango-jicama slaw, Serrano, lime chile piquin broth and mint; and Mixto, poached shrimp, octopus, mahi, tomatillo pico de gallo, passion fruit-Serrano broth and epazote.
The third course includes two tacos and a side; Carne, epazote marinated skirt steak, fava bean-potato hash, corn, salsa verde and crispy potato; Pollo, lemon-thyme marinated grilled chicken, artichoke hearts, Serrano-bacon mojo and crispy artichokes; and a side of Asparagus Toreados.
What’s a celebration without more tacos? Guests will be treated to two additional tacos that include Lobster, smoked peach hash, grilled ramps, jalapeño emulsion and chicharron and Pancita, herb marinated pork belly, roasted orange hash, cured onions and cilantro, spring greens slaw, chipotle piloncillo vinaigrette and crispy red onions, with a side of Spring Vegetable Slaw.
To end on a sweet note, guests will indulge in Tres Leches Cake.
